Yukitsubaki Rice is cultivated in Nigata prefecture in an area with very heavy snow. In spring, the snow melts and the water, now rich in minerals, is known throughout Japan for its high quality. It is with this high quality water that Yukitsubaki grow their rice. The rice is very carefully grown, harvested and then extensively polished. The quality of Yukitsubaki Rice can be seen immediately on opening the bag. The grains are uniform, beautifully polished and unbroken. With cooking, the grains maintain a soft fluffy texture and the flavour is clean and fresh. Yukisubaki Rice is an example of a humble product, treated with such respect and skill that it becomes the hero ingredient.
