Ito Shoten is a more than 200-year-old family-run company located in southern Aichi. Due to limited production, Australia may be the only foreign company who will ever be able to import the precious tamari produced by this company. Ito Shoten makes 3 grades of tamari, although only 2 are available by the case, and they only bottle a handful of cases per month. Ito Shoten’s tamari is fermented from Japanese soybeans, sea salt, and koji (natural mould spores) and is aged for at least one year in cedar barrels.
