Santa Teresa has been making quince paste in the world heritage city of Avila for well over a century. It’s made with fresh Spanish-grown quince which are peeled, poached and slowly cooked with only sugar and lemon juice.

This is a mile away from the cheap, mass-produced quince pastes made with imported pulp, thickeners, stabilisers and preservatives. The flavour is fruity and slightly tannic with a firm texture. it is the perfect accompaniment to cheese.
