Introduced to us by Clara Diez (Founder of @formaje), together Luis (Director of @quesovaldivieso) and Clara are leading the revival of artisan cheese in Spain. We’re thrilled to be part of this.
What sets Valdivieso apart is the quality of their sheep’s milk. The flock of La Mancha sheep are cared for at such a high standard that it becomes a distinctive characteristic of the cheese. These cheeses are amongst the most famous and respected artisan products in Spain.
